Vin Santo DOC Bianco dell'Empolese


GRAPE VARIETIES:
   Trebbiano toscano 100%.

VINEYARDS:   Township of Fucecchio.

Soil: limestone and clay.

Planting: 3500 vines/ha.

HARVEST:     By hand, at full maturity of the grapes.

VINIFICATION:     A three-month natural drying on straw mats.

Soft pressing, fermentation of the must (350 g/l average residual sugars) in small oak barrels (70 lt).

AGEING:  barriques, for about four years.  6 - to 8 month bottle ageing before release.

ANALYTICAL DATA:     Alcohol: 15,5% vol.  Residual sugars: 50 g/l  Total acidity: 6,64 g/l

TASTING NOTES:     Vinified by drying the grapes for several months on straw mats to concentrate sugars and flavours before being pressed and fermented.
 Marmalade and Sherry-like aromas lead the way to a full flavoured (orange zest, peach marmalade, roasted nuts) beauty.

Interesting aromas of tea, dried apple and maple syrup. Full-bodied and sweet, with lovely brown sugar and dried apricot character. 

The lengthy and tangy finish cleans it all up perfectly. Try dunking biscotti (if your mother's not watching) for a hedonistic experience.
