Fermentation in controlled temperature .

Red grapes are crushed and left in contact with their skins for 12-36 hours (as opposed to weeks), lightly tinting the juice.

Tasting Notes:
tending light ruby. Bouquet of small wild strawberries, ripe red apple, withed rose and black cherry.  The palate is savoury, of good structure, slightly tannic, the fruit is persistent; the aftertaste is long, well balanced and slightly mineral.  To pair with fish dishes (risotti di mare, soups), white meat, and fresh cheese. Best served At 10-12°c.
